As far as nutrition is concerned, there are two sides of the coin: your intake of nutrients, and your exposure to 'anti-nutrients'. These can include all sorts of elements that work against the health of the body, such as the wrong kind of food, or polluted water or air. Some, like mercury or exhaust fumes, use up nutrients, increasing your need for them and taxing the body's natural detoxification systems accordingly. Others, from microwaves to mobile phones, affect the body in ways we have not yet pinned down. Staying 100 per cent healthy means minimising the bad guys, the anti-nutrients, and optimising the good guys, the nutrients. And as it is wise to know your enemy, in this section questions about anti-nutrients and issues of environmental concern are answered.
